QUICK SAUSAGE COUSCOUS CURRY

1 pound bulk pork sausage
1 medium onion, chopped (1/2 cup)
� cup pistachio nuts, chopped
� teaspoon curry powder
1 clove garlic, finely chopped
2� cups water
2 Tablespoons margarine or butter
1 Tablespoon chopped fresh parsley or 1 teaspoon parsley flakes
� teaspoon salt
1� cups uncooked couscous
Recipe
1. Cook pork, onion, nuts, curry powder and garlic in 10-inch skillet over medium heat, stirring occasionally, until pork is no longer pink; drain.
2. Stir in water, margarine, parsley and salt; heat to boiling. Stir in couscous; remove from heat. Cover and let stand about 5 minutes or until liquid is absorbed. Fluff with fork
