    1½ POUNDS SHRIMP

    6 TABLESPOONS BUTTER

    1/4 CUP FLOUR

    1/4 TEASPOON NUTMEG

    1/4 CUP CHEDDAR CHEESE

    PAPRIKA

    1 TEASPOON SALT

    3 TABLESPOONS SHERRY

    2 CUPS HALF-AND-HALF OR LIGHT CREAM (1/2 PINT)


    Recipe



    MELT BUTTER. ADD FLOUR, NUTMEG, PAPRIKA, SALT AND PEPPER. BLEND WELL.


    SLOWLY ADD SHERRY WHILE STIRRING CONSTANTLY.


    ADD CREAM AND LET THICKEN SLIGHTLY. MAY BE REFRIGERATED AT THIS POINT.


    PLACE IN INDIVIDUAL RAMEKINS. ADD SHRIMP, COVER WITH CHEESE AND PUT UNDER BROILER FOR ABOUT 5 MINUTES.



    MAKES 8 TO 12 SERVINGS
