    APRICOT OATMEAL MUFFINS

    2 cups flour
    1 cup rolled oats
    3/4 cup sugar
    2 teaspoon baking powder
    1/2 teaspoon salt
    1 - 15 oz can apricot halves, drained (reserve 1/2 cup of syrup)
    2 beaten eggs
    1/4 cup oil
    1 teaspoon vanilla extract

    Recipe



    Chop apricots.

    Combine dry ingredients and mix well. Add reserved syrup, apricots, eggs, oil and vanilla to dry ingredients and stir until just moistened.

    Fill muffin cups to almost full. Bake at 375° for 25 to 30 minutes. Makes one dozen.
