    GREEN TOMATO RELISH

    List of Ingredients




    4 quarts cored, chopped green tomatoes (about 32 medium)
    2 quarts chopped cabbage (about 1 large)
    2 cups chopped green bell pepper (about 4 small)
    1 cup chopped onion (about 1 medium)
    1½ cups brown sugar
    ½ cup salt
    2 Tablespoons mustard seed
    1 Tablespoon celery seed
    1 Tablespoon horseradish
    4½ cups vinegar

    Sprinkle salt over vegetables and mix. Let stand 3-4 hours. Drain thoroughly. Pressing to squeeze out the moisture.

    Add sugar, spices & horseradish to vinegar. Simmer 15 minutes. Add vegetables and bring to a boil.

    Pack hot into hot sterilized jars, leaving ¼ inch space. Seal and process 10-15 minutes in hot bath. Cool and store.
