    PETE'S GRILLED NEW POTATOES

    2 Pounds red or yellow new potatoes (use largest size - the broader slices are less likely to slip through the grill rack)
    3 to 4 Tablespoons vegetable or olive oil
    1/4 to 1/2 Teaspoon salt
    1/2 to 1/2 teaspoon freshly ground black pepper

    Rinse potatoes and damp-dry with a kitchen towl. On a cutting board or with a mandoline, slice potatoes 1/4 inch thick. Add them to a large
    bowl and drizzle with oil, salt and pepper; mix with your hands, making sure the slices are well-coated. (If you must, mix with a wooden utensil
    or something that is least likely to gouge the potatoes.)

    Prepare a medium fire in a grill (See note). Meanwhile, cook the potatoes in a steamer, 3 to 4 minutes from the time the water begins to boil;
    the flesh of the potatoes will become slightly opaque. Remove potatoes from the steamer and place the slices on the grill, cooking for about 4
    minutes a side until well-browned.

    Note: To check grill temperature, count the seconds you can hold your hand, palm side down, 2 to 3 inches above the rack until it feels
    uncomfortable: 4 seconds for medium
