GRILLED TROPICAL CHICKEN BREASTS

½ cup reduced calorie apricot preserves
¼ cup Dijon mustard
½ teaspoon grated orange rind
3 Tablespoons orange juice
½ teaspoon ground ginger
3 scallions, thinly sliced
4 skinless chicken breast halvesRecipe
Combine everything except the chicken, in a small bowl. Mix well. Brush about ¼ of the mixture over each side of the chicken.
Coat a grill with cooking spray. Place grill over medium hot coals (350°-400°). Put chicken on rack, placed about 6 inches above the coals, meaty side down. Brush again with preserves. Grill covered for about 9 minutes. Turn, brush again with preserves, grill another 9 minutes, or until chicken is done.
