    Using turkey breast meat that is skinless, makes a sausage that is 99% lean. If you use skinless thigh meat, you decrease that to only about 93% lean (which still isn't bad!). Ground pork tenderloin can also be substituted, giving you a sausage that is 95% lean. Use this Italian Sausage in any recipe calling for Italian sausage, and you won't be able to tell the difference, AND you will longer the fat content of the recipe, considerably!

    List of Ingredients




    1 lb ground turkey (made from skinless breast meat)
    2 teaspoons paprika
    2 teaspoons crushed fresh garlic
    1½ teaspoons whole fennel seeds
    1 teaspoon dried Italian seasonings
    ¼ teaspoon red pepper (more to taste)
    ½ teaspoon salt

    Recipe



    Blend all the ingredients together in a large bowl. Cover and refrigerate for several hours (or overnight), to allow flavors to blend together.

    Cook and use in any recipe that calls for Italian sausage.
