    6 chicken breasts, boneless & skinless
    1 cup UNSWEETENED apple juice
    ¼ teaspoon ground ginger
    1 Tablespoon cornstarch
    2 cups unpared apples, chopped
    2 stalks celery, sliced
    3 Tablespoon raisins
    1 Tablespoon sliced green onion
    1 Tablespoon lemon juice

    Recipe



    Place chicken, half of the apple juice and the lemon juice in a non-stick skillet. Heat until boiling, cover and simmer for 20 minutes, or until chicken is done.

    Remove chicken. Mix remaining apple juice with the cornstarch. Add to the ingredients in the skillet, stirring constantly, until thickened. Serve sauce over the chicken.

    Notes: "unpared" means "unpeeled". For some recipes, you want to leave skins on.
