    1 package yellow cake mix
    1 cup water
    1/3 cup oil
    3 eggs
    3 to 4 cups of chopped rhubarb
    1 cup sugar
    1 pint whipping cream, unwhipped

    Recipe



    Grease and flour a 9x13" cake pan. Mix together the chopped rhubarb and sugar. Set aside. In separate bowl, mix together the cake mix, water, eggs and oil. Pour cake batter into prepared pan.

    Sprinkle the rhubarb mixture evenly over the cake batter. Pour the whipping cream over all. Bake at 350° for about 1 hour, or until cake springs back when lightly touched.
