    This recipe is best prepared the day before


    List of Ingredients




    1 small crusty loaf (2-3 days old cut into medium sized chunks)
    1 small cucumber (chopped)
    1 red onion (medium or large according to taste)
    3 very ripe tomatoes (chopped)
    5 Tablespoons extra virgin olive oil
    3 Tablespoons red wine vinegar
    2 Tablespoons capers
    1-2 Tablespoons sugar
    salt and pepper

    Recipe



    1) Preheat oven to 170° C/325°F/gas 3
    2) Spread the bread over baking tray evenly and cook for about 20 minutes or until golden brown. Leave to cool
    3) Meanwhile place cucumber, red onion, and tomatoes in large bowl.
    4) Add cooled bread add salt and pepper and mix thoroughly
    5) Whisk oil, red wine vinegar, capers, sugar and some salt and pepper.
    6) Drizzle liquid over salad combination and mix again.
    7) Cover the bowl (cling film or foil) and leave overnight.
    8) Serve with fresh salmon, mackerel or anything you fancy
    9) Serve with warm fresh French bread
