    List of Ingredients




    3 Tablespoon ex virgin olive oil
    ¾ cup chopped onion
    2 celery stalks diced
    4 med. Italian sausage links, casings removed and crumbled
    1 pinch dried crushed red pepper flakes
    3 cloves garlic diced
    6 cups beef broth
    4 T. tomato paste
    1 (15oz) can chick peas, drained and rinsed
    bunch of frozen chopped spinach….to taste
    6 oz of angel hair pasta, broken in pieces
    salt and pepper to taste
    parmesan cheese to taste

    In a large pot combine the olive oil, onions, and celery; cook for 5 min. on med. Heat. Add the sausage, red pepper flakes, and garlic, cook for 5-7 min, until sausage is nicely browned. Add broth, tomato paste, beans and spinach.

    Bring mixture to boil, then reduce heat and simmer for 20 minutes. Add pasta and cook until al dente.

    Season with salt and pepper to taste and sprinkle with cheese if desired.

    Makes 8 servings.
