    List of Ingredients




    2 cups fresh corn
    2 eggs
    2 Tablespoons melted butter
    2 cups milk, scalded
    1 green pepper, finely chopped, optional
    2 Tablespoons finely chopped onions, optional
    1 teaspoon salt
    1/8 teaspoon pepper

    Recipe



    Beat eggs, whisk in milk and melted butter (see our information about tempering eggs in the "About Meat, Eggs & Poultry" thread at "Juana Cookie's Kitchen Table" on the eXaScape message boards) . Add corn, green pepper, onion and seasonings. Pour into a greased 1½ quart baking dish. Set dish in a pan of hot water, and bake at 325° for about 1 hour, or until pudding is set. A knife should come out clean, when inserted in center.
