10 cups white flour
6� cups sugar
1 cup cornstarch
5 Tablespoons baking powder
1 Tablespoon salt
2� vegetable shortening (Crisco)
Recipe
Sift the flour, sugar, cornstarch, baking powder and salt together (do it in batches) into a large bowl. Using a pastry blender or your hands, cut in the shortening, until the mixture resembles something like cornmeal, in texture. Transfer to a 20 cup container with a tight-fitting lid. Store in a cool, dry place. Use within 3 months. Makes about 17 cups.
YELLOW CAKE:
5 cups cake mix
1� cups milk
1 teaspoon vanilla
3 eggs
Preheat oven to 350�
Prepare two 9 inch round cake pans.
Combine mix with milk and vanilla. Beat on high speed for 1 minute. Scrape down the bowl. Beat another minute on high. Add eggs, 1 at a time, beating well afer each addition, until batter is creamy. Pour into prepared pans. Bake 30-35 minutes, or until cake tests done.
Cool in pans for 10 minutes, before inverting the pan and removing the cake. Cook completely before frosting.
WHITE CAKE:
follow instructions for Yellow Cake, only substitute egg whites for the whole eggs.
