    Green Bean,Pearl Onion and Dill Frittata

    List of Ingredients

    1 TBS olive oil
    1 TBS sugar
    16 oz frozen pearl onions
    16 oz frozen cut green beans, or whole green beans
    2 TBS dill, fresh, chopped
    1/2 tsp salt
    1/4 tsp black pepper
    2 tsp olive oil
    16 oz fat-free egg substitute
    1 c low-fat shredded cheddar cheese

    Recipe

    Prheat broiler. Heat 2 tsp of oil in a large oven-proof, high sided skillet over med-high heat. Add green beans and onions mixture and cook 2 mins to heat through. Pour egg substitute over vegetables and cook until eggs almost cooked to the surface (about 1/4-in from the surface), shaking pan frequently, but not stirring, about 3-5 mins. Sprinkle cheese over surface of egg mixture. Place pan under broiler and cook until egg is cooked and cheese is melted, about 2 mins.

    This dish will last up to 2 days in the refrigerator
