    Mexican Bean Salad

    Recipe Introduction

    8 servings (3/4 cup each) 1 point each

    List of Ingredients

    1 c whole- kernel corn, drained
    3/4 c chopped green pepper
    1/2 c chopped onion
    2 TBS sliced riped olives
    2 med. tomatoes, chopped
    16 oz kindey beans, drained
    1(2oz) jar diced pimiento, drained
    2 TBS red wine vinegar
    1 TBS water
    1 tsp Splenda
    1/8 tsp pepper
    1 clove garlic, minced

    Recipe

    Combine first 7 ingredients in large bowl. Combine vinegar and remaining 4 ingredients. Add vinegar mixture to vegetables mixture and toss lightly. Cover and chill at least 2 hrs.
