Potato Crust Sausage Quiche

1 c fat-free egg substitute
1 c low-fat cottage cheese
1 TBS unbleached flour
1/8 tsp ground black pepper
1/2 tsp Tabasco pepper sauce
1 c shredded nonfat or reduced-fat cheddar cheese
4 oz smoked turkey sausage, diced
2 sacllions, finely chopped
2 med potatoes, scubbedRecipe
Combine the eggs, cottage cheese, flour, pepper, and Tacasco sauce in a large bowl, and stir to mix well. Stir in the cheese, sausage, and scallions. Set aside. Coat a 9-in deep pie pan with nonstick cooking spray. Slice the unpeeled potatoes 1/4-in thick, and arrange the slices in a single layer over the bottom and sides of the pan to form a crust. Pour the egg mixture into the crust. Bake uncovered at 375*F for 45 mins, or until a sharp knife inserted in the center of the quiche comes out clear. Allow to cool at room temp for 5 mins before cutting into wedges and serving.
