Penne with Sun Dried Tomatoes

List of Ingredients
1 c sundried tomatoes
3 c sliced mushrooms
4 c penne pasta (about 12 oz)
4 slices raw bacon; cut crosswise into 1/2 in sections
3 cloves garlic; minced
1 red onion; sliced into rings
2 c chopped fresh spinach
1 TBS crushed red pepper to taste
freshly ground pepper to taste
2 TBS parmesan cheese
2 TBS chopped fresh parsleyRecipe
Pour 1 c boiling water over tomatoes ans let soak for 5 mins. Drain and chop. Set aside. Place mushrooms in a med bowl with 1/4 c water. Microwave on high for 5 mins. Drain and set aside. Cook penne according to package diractions. Drainand keep warm. Cook bacon in a lrg skillet over med-high until crisp. Add garlic and cook 1 more min. Donot discard dripping!!! Add onuons, spinach, tomatoes, mushrooms, basil and red peeper flakes. Cook and stir for4-5 mins until onions are tender. Toss bacon/vegetable mixture with pasta until evenly distributed. Divide pasta between 4 serving dishes. Top with ground pepper and 1/4 c cheese. Sprinkle with parsley. Serve immediately.
