    List of Ingredients




    1 tsp canola oil
    1 c chopped onion
    1 c chopped red bell pepper
    1 tsp finely chopped garlic
    1 TBS chopped fresh thyme leaves
    1/2 tsp each salt and cayenne pepper
    2 1/4 c water
    1 c converted long-grain rice
    1 (15oz) can red kidney beans, rinsed and drained

    Recipe



    Heat oil in a nonstick skillet. Add onion, red pepper, and garlic. Saute until softened, about 6 mins. Add thyme, salt, cayenne, rice, and water; bring to a boil. Reduce heat; simmer, covered, 20 mins. Add beans; do not stir; remove from heat. Cover and let stand 5 mins., then stir.
