    Spinach Lasgana Rolls

    List of Ingredients

    1 (10oz) pkg frozen chopped spinach
    8 lasgana noodles
    1 large onion, chopped
    1 med green pepper, chopped
    2 c sliced fresh mushrooms
    2 garlic cloves, minced
    1 can diced tomatoes
    1/2 tsp dried basil
    1 (8oz) can tomato sauce
    1/2 tsp sugar
    pepper to taste
    2 c fat-free cottage cheese
    1/2 c grated parmesan cheese
    1 egg, beaten
    1/4 tsp ground nutmeg

    Recipe

    Cook the spinach and noodles and set aside.
    Spray a large saucepan with a small amount of nonstick cooking spray. Add onion, green pepper, mushrooms, and garlic; heat until tender. Stir in tomatoes, tomato sauce, basil, sugar, and pepper. Bring to a boil, then reduce heat and simmer 5 mins. While the sauce is cooking, stir together spinach, cheese, egg, and nutmeg.
    Spoon 1 c of sauce into the bottom of a 9x13 dish. Spread a scant 1/2 c spinach mixture onto each noodle and then roll it from the short end like a jelly roll. Place each roll seam down, in the dish and spoon the remaining sauce on top. Bake at 375*F foe 35-45 mins., or until sauce is bubbly.


    Make up to 24 hrs ahead and refrigerate until it's time to put in the oven.
