    Mexican Wedding Cakes


    List of Ingredients


    • 1 c. butter or margarine
    • 3/4 c. powdered sugar
    • 2 c. sifted flour
    • 1 tsp. vanilla or almond extract
    • 1 c. finely chopped pecans
    • powdered sugar


    Instructions


    1. Beat butter until fluffy.
    2. Gradually add sugar, flour and extract.
    3. Mix well and blend in pecans.
    4. Shape dough into 1 inch balls and place on ungreased cookie sheet about 1 inch apart.
    5. Bake at 325 degrees for about 25 minutes or until pale golden brown.
    6. Roll in powdered sugar while hot.
    7. Roll again when cookie has cooled.
