Mexican Wedding Cakes
List of Ingredients
- 1 c. butter or margarine
- 3/4 c. powdered sugar
- 2 c. sifted flour
- 1 tsp. vanilla or almond extract
- 1 c. finely chopped pecans
- powdered sugar
Instructions
- Beat butter until fluffy.
- Gradually add sugar, flour and extract.
- Mix well and blend in pecans.
- Shape dough into 1 inch balls and place on ungreased cookie sheet about 1 inch apart.
- Bake at 325 degrees for about 25 minutes or until pale golden brown.
- Roll in powdered sugar while hot.
- Roll again when cookie has cooled.
