    Parsled New Potatoes

    List of Ingredients




    3 lb. small red new potatoes
    1/4 c. (1/2 stick) butter or margarine
    1/4 tsp. salt
    tsp. pepper
    2 Tbsp. chopped parsley

    Recipe



    Cover potatoes in large pot with cold water. Bring to boiling. Cook for 10 to 15 minutes or until fork-tender.

    Drain. Cut potatoes in half and place in large bowl. Sprinkle with melted butter, salt, pepper and parsley; toss gently to mix.

    To Microwave: Cook potatoes in 1/4 cup water. Prick potatoes with fork. Place in 3 quart microwave casserole, placing larger potatoes at sides of casserole. Pour in 1/4 cup water. Cover. Microwave at full power for 15 to 17 minutes until tender, rearranging potatoes after 8 minutes to place less cooked potatoes at sides of casserole. When finished cooking, let potatoes stand, covered for 3 minutes. Drain.

    Place butter in 1 cup microwave safe measure. Microwave uncovered, at full power for 45 to 60 seconds to melt. Cut potatoes in half. Lightly toss with butter, salt, pepper and parsley.
