    Down Home Chicken & Dumplings

    Recipe Introduction

    These fluffy dumplings are tasty, quick and easy to fix. Serve with a salad for a complete meal.

    List of Ingredients

    4 cups chicken broth
    2 cups cubed or shredded, cooked chicken

    Dumplings:
    1 cup self-rising flour
    1 tsp. baking powder
    1/4 cup diced, cooked onions
    (or use frozen diced onions from your grocer's freezer)
    1/3 cup grated cheddar cheese (optional)
    1/2 cup milk
    2 Tablespoons oil (I use olive oil)

    Recipe

    In large pan or electric skillet bring broth to boil. Add chicken. While chicken and broth are cooking mix dumplings. Add dumpling mixture by spoonfuls to boiling chicken and broth mixture. Cover pan, reduce heat and let simmer over low heat 15-20 minutes until dumplings are cooked. (Do not lift lid during cook time.)

    Dumplings:
    Sift flour and baking powder together in mixing bowl. Add shredded cheese. Combine milk, oil and onions; add all at once to dry ingredients, stirring just until dry ingredients are moistened.

    Makes 10-15 dumplings.
