    List of Ingredients


    • 1 lb. ground round
    • 1/4 cup chopped onion
    • 4 eggs
    • 1 5-1/2 oz. can evaporated milk (2/3 cup)
    • 1 8 oz. can tomato sauce
    • 1 envelope enchilada sauce mix
    • 1/3 cup sliced pitted ripe olives (black)
    • 2 cups corn chips (like Fritos)
    • 1 cup (4 oz.) shredded cheddar cheeze (I like to use 8 oz.)


    Instructions


    1. Cook beef and onion in skillet until beef is browned and onion is tender.

    2. Spread beef in bottom of 10x6x1-1/2 inch baking dish.

    3. Beat together eggs, evaporated milk, tomato sauce and enchilada sauce mix; pour over meat layer.

    4. Sprinkle with sliced olives; top with corn chips.

    5. Bake, uncovered, in 350 degree oven for 20 to 25 minutes or until firm in the center.

    6. Sprinkle with cheeze and return to oven for 3 to 5 minutes.
