Enchilada Squares

List of Ingredients
- 1 lb. ground round
- 1/4 cup chopped onion
- 4 eggs
- 1 5-1/2 oz. can evaporated milk (2/3 cup)
- 1 8 oz. can tomato sauce
- 1 envelope enchilada sauce mix
- 1/3 cup sliced pitted ripe olives (black)
- 2 cups corn chips (like Fritos)
- 1 cup (4 oz.) shredded cheddar cheeze (I like to use 8 oz.)
Instructions
- Cook beef and onion in skillet until beef is browned and onion is tender.
- Spread beef in bottom of 10x6x1-1/2 inch baking dish.
- Beat together eggs, evaporated milk, tomato sauce and enchilada sauce mix; pour over meat layer.
- Sprinkle with sliced olives; top with corn chips.
- Bake, uncovered, in 350 degree oven for 20 to 25 minutes or until firm in the center.
- Sprinkle with cheeze and return to oven for 3 to 5 minutes.
