    List of Ingredients




    2 cups large elbow macaroni
    1/2 cup Mayonnaise
    1 Tablespoon yellow mustard
    2 Tablespoons cider vinegar
    1/4 cup white sugar
    1 medium onion (chopped)
    2 stalks celery (chopped)
    1 medium mango (green pepper) (chopped)
    1 medium cucumber (peeled, seeded, & chopped)
    1 large carrot (peeled & grated)
    1/2 cup broccoli florets (chopped)
    1/4 cup chopped pimento
    1 teaspoon salt
    1/8 teaspoon black pepper

    Optional:
    1 can tuna, or
    1 can chicken breast
    4 boiled eggs, quartered

    Recipe



    Add macaroni to a large pan of boiling salted water. Cover pot and return to a boil, then reduce heat. Cook uncovered for approximately twenty minutes (until tender). Rinse in a sieve under cold water until macaronis are cool.

    In a large bowl, mix gently: macaronis, mayonnaise, mustard, sugar, and vinegar. When fully combined, add chopped vegetables, seasonings and any optional items. Continue mixing until well combined.

    Place in a sealed container and refrigerate overnight for best flavor.
