    Margherita Tortilla Pizza (Tortizza!)

    List of Ingredients


    • 2 low-carb fajita size (4-6") white flour Tortillas
    • 1 tsp basil flavored Olive Oil, divided
    • 1/2 tsp Honey, divided
    • 40 grams Pizza Sauce, divided
    • 1/2 cup firm Roma Tomatoes, seeded, diced & dried**
    • 12 leaves fresh Basil
    • 3/4 cup (84 grams) low-moisture, part-skim Mozzarella Cheese, finely shredded
    • 2 Tbsp (10 grams) shredded Parmesan Cheese
    • pinch of Kosher Salt


    Instructions


    1. Heat oven to 400 degrees Fahrenheit. Wash & dry tomatoes. Cut in half lengthwise and use a spoon to scoop out the center and all seeds, leaving just the firm fleshy outer walls. Discard centers & seeds. Dry the seeded halves again with clean paper towels. Dice halves into small pieces. Place diced tomatoes on another clean paper towel and dry AGAIN with another paper towel. (Tomato juices can make the pizzas soggy!) Stack fresh basil leaves on top of each other and fold over lengthwise. Slice in thin diagonal pieces to make shredded basil.

    2. Brush each side of both tortilla with 1/4 tsp olive oil and place tortillas on pizza pan. Heat honey in microwave for 30 seconds to make it easier to measure and spread. Spread 1/4 tsp honey on top side only of each tortilla. Be sure to spread all the way out to the edges all around. Bake at 400F for 3-4 minutes, until the get crisp but NOT brown yet. Remove from oven.

    3. Divide pizza sauce between the two tortillas. Spread sauce evenly over each tortilla (on honey side) and all the way out to the edges. (Make sure sauce completely covers the tortillas -- this keeps the edges from burning while the pizzas cook!)

    4. Sprinkle 1/4 cup (28 grams) finely shredded mozzarella cheese on each tortilla.

    5. Spread 1/4 cup diced dry tomatoes over each tortilla. Sprinkle evenly with finely shredded basil leaves.

    6. Divide remaining 1/4 cup mozzarella between the tortillas and sprinkle on top of tomatoes and basil. Sprinkle 1 Tbsp (5 grams) shredded Parmesan cheese over each tortilla. Sprinkle a pinch of kosher salt over each pizza to finish.

    7. Place pizzas back in the oven and bake at 400F for 10 minutes, then BROIL at 500F for 1-2 minutes until the cheese is golden brown and bubbly (WATCH CLOSELY!).

    8. After removing from oven slice with wheel cutter and let "rest" for couple of minutes. Mmmmmmm!
