    Here's another chicken recipe that I sort of made up. I had a similar dish in a restaurant years ago and decided to try making it myself. It was served with a cheese sauce, but I prefer it without. Make your own favorite sauce if you prefer. I made it for a crowd. You may want to half the recipe.

    List of Ingredients




    3 (10 ounce) packages of chopped spinach, thawed and well drained.
    3 eggs
    1/2 teaspoon onion powder
    3/4 cup grated parmesan cheese, divided.
    3/4 cup seasoned bread crumbs (you may need more, that's ok)
    16 boneless, skinless chicken breast halves
    salt and pepper to taste
    5 tablespoons butter, melted.

    Recipe



    *Drain spinach, make sure it's very dry.

    *Beat eggs, onion powder, salt and pepper together. Add spinach and 1/4 cup of the parmesan cheese, mix well.

    *Combine breadcrumbs and remaining parmesan.

    *Sprinkle chicken with salt and pepper, coat with bread crumb mixture.

    *Place chicken in 2 greased 9x13 pans. Spread spinach mixture on each piece of chicken. Sprinkle with remaining bread crumb mixture and drizzle with melted butter.

    *Bake at 350 degrees, 35-40 minutes, or until chickes is done.

    Serve with your favorite cheese sauce or gravy if desired.
