List of Ingredients
- 1 egg
- 2 teaspoons prepared mustard
- 1 teaspoon salt
- one-eighth teaspoon pepper
- 1 pound ground beef
- one-fourth cup grated Parmesan cheese
- three-fourths cup finely chopped scallions
- one-fourth cup finely chopped parsley
- one-fourth cup butter or margarine
- 2 cups diced green pepper (about 2 large peppers)
- one-fourth cup diced pimiento
- 1 tablespoon salt (optional)
- 3 quarts boiling water
- 8 ounces (6 to 6 and one-half cups) wide egg noodles
- Salt and pepper
Instructions
- Beat egg, mustard, 1 teaspoon salt, and one-eighth teaspoon pepper in large bowl. Add beef, Parmesan cheese, one-fourth cup scallions, and parsley; toss all ingredients lightly until combined. Shape into 4 or 6 patties; grill or cook in skillet.
- Meanwhile, melt butter in a large skillet over medium heat; add green pepper and one-half cup scallions; saute 6 to 8 minutes, until tender. Stir in pimiento.
- While vegetables are sauteing, prepare noodles. Add 1 tablespoon salt (optional) to rapidly boiling water. Gradually add noodles so that water continues to boil. Cook uncovered, stirring occasionally, 7 to 9 minutes until desired tenderness. Drain in colander.
- Toss hot noodles with sauteed vegetable mixture; season to taste with salt and pepper. Turn into serving dish and top with hamburgers.
- Yield: 4 to 6 servings
