Not rolled like Garrazos but easy and good
List of Ingredients
COATING:
2 C Italian seasoned bread crumbs
1 C grated Parmesan or Romano cheese
1 T minced parsley
4 cloves of garlic (chopped)
salt and pepper to taste
6 pounds of boneless chicken breasts
1/2 C virgin olive oil
Recipe
Cut the chicken breasts into 1 1/2 x 1 1/2" cubes
Dip the chicken pieces in oil and then into the crumb mixture
Arrange the coated pieces on a sprayed cookie sheet
Bake at 350 degrees for 30-35 minutes (turn chicken over when 1/2 cooked
