Oven-Fried Chicken Fingers

- 2C Ritz cracker crumbs
- 1/2 t garlic powder
- 1/4 t black pepper
- 1/4 C reduced-fat mayonnaise
- 1 T skim or low-fat milk
- 1 lb-1 1/2 lb chicken tenders
- Cooking oil spray
- BBQ or honey mustard sauce (optional)
Instructions
- Preheat oven to 450 degrees
- Place crackers, garlic powder and black pepper in a gallon-size zip-lock plastic bag. Use a rolling pin or sturdy drinking glass to crush the crackers to make fine crumbs. Set aside.
- Mix together mayonnaise and milk in a medium mixing bowl. Add chicken tenders to the bowl and stir until tenders are evenly coated with the mayonnaise mixture.
- Sptay an 11-x-17 jellyroll pan with cooking oil spray. Add about 1/3 of the chicken tenders at a time to coat the tenders with crumbs. Remove tenders from the bag and place them on the baking sheet. Repeat until all the chicken is coated with crumbs.
- Bake the chicken, uncovered, until it is lightly browned and cooked through, about 15 minutes. Use a metal spatula to remove the chicken from the baking sheet and serve at once, with sauces for dipping, if desired.
