    Vegetable Meat Loaf

    Recipe Introduction

    Don't let this humble dish fool you. It's fabulous and much healthier than the traditional recipe.

    List of Ingredients

    2 t olive oil
    1/2 c chopped onion
    1 c shredded carrots
    2/3 c shredded cabbage
    3/4 c chopped green and red sweet pepper
    1 t minced garlic
    1 egg
    1 egg white
    1/2 t salt
    1 t oregano
    1/2 t pepper
    1 t basil
    1 T Worchestershire sauce
    1/3 c bread crumbs
    1 pound lean ground sirloin

    Recipe

    Saute first 6 ingredients for 5 minutes on medium-high, then 10-15 minutes on medium-low.

    Remove from heat and cool.

    Combine remaining ingredients and then add vegetables.

    Place in loaf pan and bake at 350 degrees for 1 hour.

    Remove juices (drain) and bake 15 minutes more.

    Serves 6
