Meatloaf
List of Ingredients
1 lb ground beef
1 lb ground pork (or any combination of the 2)
1 onion chopped
1 c breadcrumbs
2/3 c hot ketchup (Heinz makes this)
2-3 eggs, lightly beaten
1 T. minced garlic
1 t. ground thyme
1 T. dried parsley
salt
pepper
Mixture of hot and regular ketchup for the top
Recipe
Mix all ingredients together until well blended. Do not over mix! Put mixture into a lightly greased loaf pan, and brush a SMALL amount of hot & regular ketchup on top. Place in a 350 F. oven and bake for 1 hour. Remove loaf from oven and pour off excess fat, spread the rest of the ketchup mixture on top and put back in the oven for another 1 mins or until center of loaf reads 165 degrees. Remove from oven, drain off excess fat and let stand for 15 mins.
