    Roasted Red Pepper Coconut Soup

    List of Ingredients


    • 6 red bell peppers, roasted or two 13-oz roasted sweet red peppers
    • 2 T vegetable oil
    • 2 c chopped onion
    • 2 garlic cloves, peeled and left whole
    • 1 t red pepper flakes or 1/4 t cayenne pepper
    • 1 t salt
    • 2 c undrained tomatoes (16 oz can)
    • 1 3/4 c reduced fat coconut milk (14 oz can)
    • 2 c water


    Instructions


    1. Warm oil over medium heat. Add next 4 ingredients and saute 15 minutes.
    2. Remove from heat and add tomatoes, coconut milk, water and peppers.
    3. Puree until smooth and return to medium heat.
