Roasted Red Pepper Coconut Soup

List of Ingredients
- 6 red bell peppers, roasted or two 13-oz roasted sweet red peppers
- 2 T vegetable oil
- 2 c chopped onion
- 2 garlic cloves, peeled and left whole
- 1 t red pepper flakes or 1/4 t cayenne pepper
- 1 t salt
- 2 c undrained tomatoes (16 oz can)
- 1 3/4 c reduced fat coconut milk (14 oz can)
- 2 c water
Instructions
- Warm oil over medium heat. Add next 4 ingredients and saute 15 minutes.
- Remove from heat and add tomatoes, coconut milk, water and peppers.
- Puree until smooth and return to medium heat.
