    Ok, first let me say this is not my recipe, it belongs to Gaelen from the PP board, but it is soooo good I didn't want you guys to miss out. I make these once a week and have 1 with my eggs and bacon. They're like a dinner roll taste wise, if you use the sesame butter....

    List of Ingredients




    (dry)
    1 cup almond meal (no skins)
    1 Tbsp vital wheat gluten (my tweak)
    1 teaspoon baking powder
    1/8 tsp salt
    2 Tbsp splenda-- for sweeter muffins add more

    (wet)
    3 tablespoons butter melted or softened
    2 eggs
    3 tablespoons yogurt
    3 tablespoons sesame seed butter (my tweak, she used PB) sesame butter makes them more like dinner rolls
    1 T sesame seeds to sprinkle on top

    Recipe



    Mix all the wet ingredients together. Then add all dry and mix.

    Pour the batter into buttered muffin tins sprinkle sesame seeds on top and bake at 375 for 20 minutes or until just pale golden on top. Do not over bake or muffins will be dry. cool completely on wire rack then store in ziplock lined with a paper towel, reheat 10 seconds in microwave.

    about (3g ECC a piece.) and 9-10 protein (6 muffins)
