    ALBONDIGAS MEATBALL SOUP

    List of Ingredients

    6 C water
    1 lb frozen meatballs (cooked according to directions)
    1 can tomato sauce
    ½ Onion, finely chopped
    1 teaspoon vinegar
    1 garlic clove, minced
    2-3 large potatoes cut into ½ inch cubes
    1 carrot cut diagonally into ¼ inch slices
    2 teaspoons chicken bouillon
    ½ teaspoon oregano
    ½ teaspoon thyme
    ¼ Cup chopped cilantro

    Recipe

    Bring water to a boil in large pot.
    Add meatballs, tomato sauce, onion, vinegar, garlic potatoes and carrots.
    Return to a boil.
    Mix in bouillon, oregano and thyme.
    Simmer for 3-5 minutes or until carrots and potatoes are tender.
    Stir in cilantro.
    Serve with warm corn tortillas.
