    This is the perfect complement to just about any Mexican entree. You might want to halve this recipe if you are serving fewer than four people.

    List of Ingredients





    2 cups white rice
    2 onions, chopped
    4 Tblsp. oil
    2 green peppers, chopped
    2 cups tomatoes, chopped
    4 tsp. chili powder
    2 tsp. salt
    2 cups boiling water

    Recipe



    Saute rice and onion in oil. Stir in remaining ingredients. Bring to a boil; reduce heat and simmer, covered, for 30 minutes or until rice is tender.
