    1/4 cup EggBeaters or 1 large egg
    3/4 cup FF milk
    1 cup uncooked cornmeal (I prefer yellow cornmeal but you can use white as well)
    2 tsp baking powder
    3/4 tsp table salt
    2 tsp olive oil
    1/2 cup FF sour cream
    1 cup Galaxy soy Monterey Jack and Cheddar blend flavored shredded cheese, or other FF shredded soy cheese
    1/2 cup Splenda
    6 individual green onions, chopped

    Recipe



    1. Preheat oven to 425 degrees. Lighly spray a 8x8 glass baking pan with nonstick spray.

    2. Beat egg and add to milk, in small bowl. Put cornmeal in large mixing bowl. Add egg and milk mixture to the cornmeal.

    3. Add remaining ingredients and stir just until moistened.

    4. Pour into the glass baking pan. Bake for 20 to 35 minutes in 425 degree oven, uncovered. (I find that 30 minutes is perfect, in my oven.)

    5. Serve while warm. (Very good warm, topped with a dollap of FF sour cream.)
