    Lemon Pineapple Cheesecake (Core)

    24 oz FF cottage cheese
    1 pkg. SF lemon Jello
    1 pkg. Instant SF lemon pudding (or cheesecake flavor)
    2 large eggs
    1/4 c. Splenda
    1 small can crushed pineapple, drained
    dash vanilla

    Recipe



    Blend all in food processor, bake in round cake pan for 45 or so minutes at 350 until it cracks. Take out and put in frig to set.

    *** I blended the cottage cheese and everything else (except the pineapple) in TWO batches in my blender (since the volume is too much for it all at once in the blender)... blend until silky smooth. Pour it all in a bowl and stir in crushed pineapple. Bake 55 minutes at 325. Let cool, then refrigerate several hours (best if chilled overnight).
