    Serves: 4
    Points: 3 each serving

    List of Ingredients




    2 teaspoons olive oil
    1 Lg onion, thin sliced
    1/2 tsp curry powder
    1/4 tsp cumin
    2 cups cooked brown rice
    1/4 cup ff sour cream
    2 plum tomatoes, chopped (1 cup)
    3/4 cup ff evaporated milk
    4 lg eggs
    1/4 cup shredded mozz cheese
    pinch of pepper

    Recipe



    Heat oven to 350, spray 1 qt casserole dish with cooking spray.
    In skillet cook onion and salt in oil for 10 minutes, than add curry, cumin, cook another 1 minute.
    Mix rice and sour cream in bowl and spread on bottom of dish, top with onion mixture and scatter tomatoes on top, pour ev. milk over top.
    Using a spoon make 4 dents into casserole and break an egg into each, sprinkle casserole with cheese and pepper.
    Cover with foil and bake until hot and eggs are cooked. (30 - 35 minutes)
    Eat immediately!
