    List of Ingredients




    4 large baking potatoes, shredded
    8 slices of canadian bacon
    1/2 large onion, sliced thin
    4 oz sliced mushrooms
    12 eggs, beaten well
    4 oz cheddar cheese (I used lowfat which added 1 point per serving)
    salt & pepper to taste
    1/4 cup skim milk
    non-stick cooking spray
    1 tbsp olive oil

    Recipe



    Spray ovenproof skillet with nonstick spray and then spread olive oil on the bottom of pan. Spread shredded potatoes on bottom of pan, and put in 350 oven until golden brown.

    In a large bowl, combine eggs, milk, cheese, mushrooms, salt, & pepper.

    Once potatoes are browned, layer canadian bacon on top of them. Then layer sliced onions on top of canadian bacon. Pour eggs on top of that. Place in oven for about 30 minutes or until eggs are almost set. Then broil for about 4 -5 minutes until lightly browned on top. Let set on counter for about 5 minutes, and then slice into 8 servings.
