    Spinach-Cheese Frittata

    4 large eggs (or equivalent egg substitute)
    2 large egg whites
    1 cup fresh baby spinach leaves, washed & chopped
    2 Tbsp scallions, finely chopped
    1/4 tsp salt
    1/4 tsp black pepper
    1 serving cooking spray
    1/2 cup Kraft-Free shredded cheddar cheese (or other brand, FF)

    1. Preheat oven to 400 degrees F. Beat together eggs and egg whites in a large bowl; stir in spinach, scallions, salt and pepper.
    2. Coat a 12-inch ovenproof nonstick skillet with cooking spray; heat skillet over medium heat. Pour egg mixture into skillet and cook until partially set, about 5 minutes.
    3. Sprinkle cheese over eggs. Bake in oven until cheese softens and eggs firm up, about 5 minutes. Remove from oven and let stand 1 minute before cutting into 8 wedges.
