1 cup whole-grain wheat flour
1 tsp baking powder
1/4 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp table salt
1/4 cup Eden Organic Apple Sauce
1/3 cup unpacked brown sugar
1/4 cup Egg Beaters Egg Beaters
1/3 cup plain fat-free yogurt
3/4 cup shredded carrots
1/2 cup cooked yams (mashed)
1 Tbsp sesame seeds
1 Tbsp pumpkin and squash seeds (unhulled)
1 tsp vanilla extract Recipe
Preheat oven to 375. Spray a bit of cooking spray in the muffin tins to prevent them from sticking.
Mix flour, baking soda, baking powder, cinnamon, ginger, and salt into a bowl.
In another bowl, add applesauce, sugar, and egg, yogurt and vanilla. Stir in carrot and sweet potato. Add this to the bowl of dry ingredients, and mix until blended. Spoon the batter into the muffin cups filling them to the top.
Sprinkle seeds over each muffin.
Bake 22 to 27 minutes until lightly browned. Cool 5 minutes before unmolding.
