    Serves 4-6
    If on Core, you only need to count .5 point/serving for the flour

    List of Ingredients




    1 lb baking potatoes
    1/2 teaspoon salt
    1/4 teaspoon freshly ground black pepper
    1 large egg, beaten to blend
    1/4 cup flour

    Recipe



    Bake potatoes in the oven until soft. Split open the potatoes and scoop out the pulp. Do not use the skins. Mash until very creamy. Mix in no more than 3 tbs of the egg (do not use the whole egg). Pour the flour over the potato mixture and knead only until
    blended. Divide the dough into 4's. Roll each piece out into a 1/2-inch-diameter rope and cut the dough into 1-inch pieces.
    Roll each piece of dough over the tines of a fork to make grooves. Cook in a large pot of salted boiling water until the gnocchi rise to the top and then continue cooking for another 3-4 minutes longer. Drain and immediately serve with sauce.
