    Smoked Salmon Fettucine

    3/4 lb whole wheat fettuccine
    2 T. extra virgin olive oil
    1 garlic glove, minced
    4 medium tomatoes, seeded and diced
    1/2 smoked salmon, sliced
    1 cup ff evap. milk
    1/4 tsp pepper
    1 oz caviar-optional

    Recipe



    In large pot of boiling water, cook fettucine until al dente. Drain and set aside.
    In large skillet, heat olive oil & butter. Stir in garlic and onion, and saute, stirring often, for 2 minutes, until fragrant. Add the tomatoes, and bring to a boil. Reduce heat and simmer for 5 minutes, or until softened and beginning to thicken.
    Sitr in the smoked salmon, evap. milk; simmer for 5 minutes, or until thick enough to coat the back of a spoon. Gently fold in cooked pasta & pepper. Garnish with a rosette of smoked salmon or a dollop of caviar.
    Chef suggestion: if a saltier taste is desired, add smoked salmon at the same time as the tomatoes.

    Core-ish variation
    Use 100% whole wheat fettucine
    omit butter, use 1 1/2 Tbs extra virgin olive oil instead
    use ff half and half or ff evaporated skim milk instead of cream

    I did not desire a "saltier taste" so I added the smoked salmon along w/the cream & vodka.
