    Autumn Roast Chicken - core

    6-7 lb roasting chicken
    1 large or 2 small granny smith apples, peeled cored and coarsely chopped
    2 stalks of celery chopped
    1 large onion cut into 1 inch chunks
    1 cup fresh cranberries
    2 teaspoons chopped fresh thyme or 1/2 tsp dried
    1/2 teaspoon salt
    freshly ground pepper to taste
    1 cup water

    Recipe



    Wash and dry chicken after removing neck and giblets.

    Combine the rest of the ingredients except the water.

    Stuff the chicken with it and bake for 3-3 1/2 hours at 375 degrees.

    The recipe says to pour the water in the bottom of the roasting pan . . HOWEVER, I didn't use the water at all and I roasted mine in my crockpot with a meat them. until it reached 180 degrees inside.

    AND there is a glaze made by combinging
    1/2 cup unsweetened applesauce
    1 Tablespoon olive oil
    1/2 teas. salt and pepper to taste

    Baste the bird often (I did this even in the crockpot)
