    Curried Shrimp & Scallop Soup - Core

    List of Ingredients




    4 cups chicken broth
    1 large can crushed tomatoes
    1 small sweet potato, diced
    1 med onion, chopped
    2 cloves garlic, minced
    cut green beans (1/2-3/4 lb)
    1 lb medium shrimp, peeled, deveined
    1/2 lb bay scallops
    3 tsp curry blend (or powder)
    2 tsp cumin
    2 tsp olive oil
    salt & pepper to taste

    Recipe



    In large pot, saute onion and garlic in olive oil. Add chicken broth, crushed tomatoes, sweet potato, green beans, curry blend and cumin. Simmer on low until potato is cooked. Add shrimp and scallops, turn heat up to medium - cook until shrimp and scallops are done, about 10 minutes more. Add salt and pepper if needed.
