    List of Ingredients




    1 lb. ground turkey
    1/2 med. onion chopped
    1 can black beans
    1 can kidney beans
    1 can pinto beans
    1 can whole kernal corn (I used 2 C. frozen corn)
    1 can (1 lb size) diced tomatoes
    1 can rotel (I just used another can of diced toms and 1/2 small can of chopped gr. chilis)
    1 package taco seasoning (see below)
    1 pkg. Hidden Valley Ranch dressing mix dry
    2 1/2 C. water
    2 T. Franks Hot sauce
    2 minced cloves of garlic

    Recipe



    Brown turkey with onion, and drain away fat. In large soup pot, mix together rest of ingredients (do not drain canned items-just dump it all in the pot) Add turkey mixture; bring to boil and add garlic right when it starts to simmer. Simmer for about 45 minutes. This was very satisfying and great with a dollop of FF sour sream on veggie shredds ontop.

    This is the taco seasoning mix I use:

    4 tsp. dried minced onion
    3 tsp. chili powder
    1 tsp cornstarch (I omitted this because I don't think that it is core)
    1 tsp. garlic powder
    1 tsp. cummin
    1/2 tsp. oregano
    1/8 tsp. cayenne pepper

    (If you are looking for something really different and good- try this mix for making fish tacos- just pan fry 1 1/2 lbs. light white fish fillets, like flounder or cod, in pam ontop of stove. Add this mix and 3/4 C. water and simmer till ready and thick enough to suit you. My DH takes leftovers to the office and they drool!!! It is that good.)
