I found this soup is tastier the second day versus serving right away. The flavors set in more or something.
List of Ingredients
1 jalepeno pepper
1/2 small yellow onion
1 TB olive oil
1 LG can pumpkin
4 cups chicken broth
juice from 1/2 lime
2 TB fresh cilantro
1TB maple syrup or brown sugar.Recipe
Saute the pepper and onion in olive oil for 1 minute.
Add the chicken broth, pumpkin and lime juice. Stir and bring to a boil.
Add in cilantro, lower heat and simmer for five minutes.
Stir in maple syrup/brown sugar and serve.
