    Filled Chocolate Cookies

    1 C Sugar
    1 C Brw Sugar
    1 C Margarine
    2 tsp Vanilla
    2 Eggs
    2 1/2 C Flour
    3/4 C Baking Cocoa
    1 tsp Bkg Soda

    Candy of choice - Rolo, Reese Cup, Mint Cup, almond joys
    Choc or White Almond Bark - melted



    Recipe



    Cream butter & sugars. Add eggs & vanilla.
    Then add flour, cocoa, and bkg soda.
    Chill at least 30 min. Roll dough into about a 1 1/2" ball.
    Now insert candy of choice and roll the dough all around the candy.
    Bake at 375 7-10 min.
    Upon removal from the oven, gently tap or push down the candy mound
    that may still be showing. I do this with a knife.
    Cool and add topping.

    Topping suggestions:
    Before I bake the Rolo ones, I dip the tops of the cookies in a
    mixture of chopped pecans & sugar.
    I then drizzle white choc on top of cooled cookie.

    For the PB one, I top each baked & cooled cookie with a dab of PB
    that I've softened just slightly in the microwave.
    I then top this with choc almond bark.

    For the mint cookies, I tint some white almond bark green before
    drizzling it on top of cookies.
    I found the mint cups from Walmart work the best because the mint is
    self contained in the choc & doesn't ooze all over the place while
    baking like the patties do.
