    Lemon Crisps

    Got this recipe in my email from Nancy Blair and they do make a wonderful lemon flavored cookie.


    List of Ingredients


    • 3 1/4 cups unsifted all-purpose flour
    • 1 1/2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 3/4 cup butter
    • 3/4 cup granulated sugar
    • 3/4 cup powdered sugar
    • 1/2 cup Crisco oil
    • 2 eggs
    • 2 teaspoons grated lemon peel
    • 2 teaspoons pure lemon extract
    • granulated sugar


    Instructions


    1. Mix flour, baking powder and salt in a small mixing bowl. Set aside.

    2. Cream butter and sugars in a large bowl. Blend in the oil, eggs. lemon peel and lemon extract. Stir in the flour mixture.

    3. Cover and refrigerate about 2 hours.

    4. Preheat oven to 350 degrees. Shape dough with the small end of a melon baller and using a piece of plastic wrap, flatten to 1/16 inch thickness with the bottom of a glass (one you can see through). Lift the plastic wrap gently to maintain cookie shape.

    5. If any of the cookies are not round, scrape the dough up and start again. (This will save you a lot of work and mishaped cookies).

    6. Bake 5 minutes and rotate cookie sheet and bake only about 1 minute longer until just slightly brown on the edges.

    7. Remove immediately to rack and while still warm, generously sugar each cookie and shake off excess.


    Final Comments


    I roll cookies in sugar before baking instead of sprinkling them afterwards and don't bother with the plastic wrap as the cookies don't stick once rolled in sugar.
