1 lb Beef Stew Meat
2 T. Vegetable Oil
1 C. Chopped Onion
2 Cloves Garlic Minced
1 (32 Oz Beef Broth)
1- 14.5 Can Diced Tomatoes
1 Quart Water
2 Bay Leaves
1-12oz Kroger Recipe Beginnings Soup Mix (Frozen Vegetables for Soup)
1/2 t. dried Oregano
1/2 t. dried Thyme
1/2 t. dried Basil
1/2 C. Uncooked Barley
Recipe
Trim fat and cut beef into 1 inch cubes. Place meat in large pot over medium heat with Oil, Onion, and Garlic and stir until Meat and Onion are tender.
Add Broth, Tomatoes,Water and Bay Leaves. Bring to a boil, reduce heat and cover and simmer for 1 hour.
Add Vegetables, Oregano, Thyme, Basil and Barley and bring to a boil. Reduce heat, cover and simmer until vegetables are tender, about 30 minutes
